  • 3 cup baking mix (Bisquick)
  • 1 cup shredded cheddar cheese
  • Salt
  • 2 eggs eggs, lightly beaten
  • cup milk
  • 1 can diced tomatoes with juice (14.5-oz.)

Preheat oven to 350°F (175°C). Spray two loaf pans with no-stick spray.

In a large bowl, stir together baking mix, shredded cheddar cheese, and salt. Make a well in the center of the mixture.

Add the beaten eggs, milk, and diced tomatoes with juice into the well. Stir gently until the dry ingredients are just moistened.

Divide the batter evenly between the prepared loaf pans. Bake at 350°F (175°C) for 45 minutes, or until a wooden toothpick inserted into the center comes out clean.

Cool the bread in the pans for 5 minutes. Remove from pans and serve warm.
