  • 1.0 teaspoon Salt
  • 2.0 tablespoon Nutritional yeast
  • 2.0 pound Medium-firm tofu
  • 2.0 cloves Garlic, minced
  • 2.5 cup Sliced mushrooms
  • 1.0 medium Green pepper, chopped
  • 1.0 medium Onion, chopped
  • 2.0 teaspoon Olive oil

Instructions

Step 1

Heat olive oil in a medium skillet and sauté vegetables and garlic until limp.

In a large bowl, crumble or mash the tofu. Add the sautéed vegetables, nutritional yeast, and salt.

30 to 40 minutes

Preheat oven to 350F. Spread the tofu mixture evenly into a 9 1/2-inch or 10-inch quiche pan. Bake until the edges start to brown.

Garnish with tomatoes.
