Instructions
Step 1
Cream the butter and sugar together.
Step 2
Beat the egg yolks and orange zest into the creamed butter and sugar mixture.

Add the fresh orange juice to the mixture.

In a separate bowl, mix together the flour, baking soda, and salt (dry ingredients). Then, gradually add the dry ingredients to the wet mixture, mixing until just combined.

Mix in the chopped pecans.

In a separate clean bowl, beat the egg whites until stiff peaks form.

Gently fold the beaten egg whites into the batter until no streaks remain.

Grease one loaf pan, pour the batter into the pan, and bake in a preheated 350°F (175°C) oven for 50 minutes.
