Citrus and Poppy Seeds Cake
A little idea, perfect for a Saturday afternoon: a moisty cake flavoured with orange, lemon and lime, and enlivened by those little seeds that - for how small as they may be - can make the difference. I thought it would have lasted the weekend - well, at least until Sunday breakfast! But hey, baked a couple of hours ago, already it's almost all gone. Better hurry up and post the recipe then, before any trace of human memory disappears…

- 2 pieces oranges
- 2 pieces lemons
- 2 pieces limes
- 100 grams butter
- 100 grams caster sugar
- 2 pieces eggs
- 100 milliliters yoghurt
- 150 milliliters milk
- 250 grams self-raising flour
- 1/2 teaspoons baking soda
- 2 tablespoons poppy seeds (for batter)
- 100 grams sugar (for syrup)
- pinch poppy seeds (for garnish)
Instructions
Step 1
Zest the citrus fruits. In a large mixing bowl, beat the butter until creamy with 100 grams of caster sugar. Whisk in the eggs, citrus zest, yogurt, and milk. In a separate bowl, mix the self-raising flour with the baking soda, then gradually fold this into the wet mixture, followed by 2 tablespoons of poppy seeds (for batter).
Step 2
Butter a loaf tin and line it with parchment paper.
Step 3
Pour the cake mixture into the prepared loaf tin. Bake in a preheated oven at 180°C for about an hour, or until the surface is golden and a toothpick inserted into the center of the cake comes out clean and dry.

Meanwhile, squeeze the oranges, lemons, and lime, and strain the juice. Pour the strained juice into a small saucepan with 100 grams of sugar (for syrup) and bring to a boil, stirring until the sugar is fully dissolved. Remove the saucepan from the heat.
Step 5
Once the cake is ready, remove it from the oven. Prick the entire top surface of the cake using a toothpick or a thin skewer. Gently pour the warm citrus syrup evenly over the cake and sprinkle with a pinch of poppy seeds (for garnish). Allow the syrup to soak through for a few minutes before carefully removing the cake from the tin.
