  • 1 package cabbage, shredded
  • 1 cup carrots, shredded
  • 2 large green onions, sliced
  • 1/2 cup dried cranberries
  • 1/2 cup pepitas, toasted
  • 4 ounces low fat plain yogurt
  • 1/2 cup orange juice
  • 1 squeeze lemon juice
  • 1 tablespoon soy sauce
  • 2 tablespoons grape seed oil
  • 1/2 tablespoon ginger, minced
  • 1 clove garlic, minced
  • 2 teaspoons sugar

Step 1

Combine the shredded cabbage, carrots, green onions, cranberries, and pepitas in a large bowl. In a separate small bowl, combine the remaining ingredients (yogurt, orange juice, lemon juice, soy sauce, grape seed oil, ginger, garlic, and sugar).

Toss the contents of both bowls together until well combined and chill for 30 minutes before serving.
