Lemon Cheese Icing

Ingredients

1 1/2 cups Sugar
1/2 cup Lemon juice
6 Egg yolks, beaten
1/2 cup Flour, all-purpose
1 cup Water, heated
1/2 stk butter

Preparation

Mix sugar and flour; add lemon juice and mix until smooth. Add eggs and mix well. Add hot water gradually and cook until smooth and thick over low heat - stir with a wooden spoon. Add butter and beat until ready to spread.

NOTES : Drys quickly once it starts!

Enough for 3-9" layers if spread thin
