Cinnamon-Sugar Cake

Ingredients

1 cup packed brown sugar
cup margarine, softened
1 teaspoon salt
1 teaspoon baking soda
teaspoon baking powder
teaspoon ground cinnamon to taste
2 teaspoons vanilla
2 cups cold water

Preparation

Preheat oven to 350. Grease and flour a 9-by-13-inch cake pan. Thoroughly mix flour, sugars and butter in large bowl (Ellen does not cream the butter and sugars first). Stir in salt, baking soda and baking powder. Sprinkle cinnamon across batter a few times; mix. Add vanilla, oil and water; beat well.

Pour batter into prepared pan. Bake for 35 minutes or until wooden toothpick inserted into center comes out clean.

Serve plain or top with fruit-flavored pie filling, whipping cream or frosting.

Note: This cake does not contain eggs.

Tester's note: We made the cake as Ellen described, although, unlike her, we used an electric mixer. Being a fan of cinnamon, we used enough to cover the batter. The cake was very dense, moist and flavorful.
