- Olive oil
- 24 leaves Chopped basil leaves
- 1/4 teaspoon Chopped garlic
- 1 small Shallot, finely chopped
- 1/3 cup Rice vinegar
- 6 tablespoons Freshly grated parmesan
- 3 teaspoons Chopped garlic
- 6 tablespoons Chopped sundried tomatoes (drained)
- 6 cups Loosely packed parsley leaves (no stems)
Instructions
Step 1
Toss 6 cups of loosely packed parsley leaves with 1/4 teaspoon chopped garlic.
Step 2
In a separate mixing bowl, combine olive oil, 24 chopped basil leaves, 1 small finely chopped shallot, 1/3 cup rice vinegar, 3 teaspoons chopped garlic, and 6 tablespoons chopped sundried tomatoes. Mix well to create the dressing, incorporating a portion of the freshly grated parmesan while reserving some for garnish.

Add the prepared dressing to the parsley mixture.

Toss the salad again to combine all ingredients thoroughly.

Transfer the salad to a platter or distribute into individual dishes. Sprinkle approximately 1 tablespoon of the reserved freshly grated parmesan cheese over each serving.
