- 2 cups Graham cracker crumbs
- 3/4 cup Melted butter
- 4-5 Medium sized bananas
- 500 grams Pineapple or strawberry ice cream (softened but not melted)
- 1 cup Chopped walnuts
- 1 cup Chocolate chips
- 1 cup Confectioner's sugar
- 1 cup Evaporated milk
- 1 teaspoon Vanilla extract
- 30 ml Whipped cream topping
- 4 tablespoons Shredded coconut flakes
- 1 cup Pitted cherries
Instructions
Step 1
Lightly grease a 9x13 inch glass dish.
Step 2
In a clean bowl, mix the graham cracker crumbs with 1/2 cup melted butter.
Step 3
Remove 1/2 cup of the graham cracker and butter mixture and set aside.
Step 4
Gently press the remaining graham cracker and butter mixture at the bottom of the glass dish to form the crust.
Step 5
Slice the bananas into thin rounds.
Step 6
Arrange the sliced bananas over the graham cracker crust.

Spread a thick layer of softened ice cream evenly over the bananas.

Sprinkle the chopped walnuts over the ice cream layer.

Spread the shredded coconut flakes on top.

Press gently. Cover the dish with plastic wrap and freeze until firm.

In the meantime, in a saucepan, heat the chocolate chips with the remaining 1/4 cup of melted butter.

Stir until smooth.

Add the confectioner's sugar and evaporated milk.

Stir until a smooth mixture forms.

Remove from heat and add the vanilla extract.

Cool the chocolate mixture for 30 minutes.

Pour the cooled chocolate mixture evenly over the frozen ice cream and banana layer.

Freeze for another 45 minutes until firm.

Remove from freezer and spread the whipped cream topping over the chocolate layer.

Sprinkle with the reserved graham cracker crumbs and decorate with pitted cherries.

Freeze for another 3-4 hours.

Remove from freezer and let stand for 10 minutes before slicing and serving.
