- 1 Watermelon
- 1 tablespoon salt
- 1 quart water
- lemon
- sugar
- whole spices(optional)

Pare and cut watermelon rind into pieces 2 inches long and 3/4 inches wide.

overnight
Prepare brine by dissolving 1 tablespoon salt in 1 quart water. Cover the watermelon rind with the brine and let stand overnight.

10 minutes
Drain the rind. Cover with fresh water and boil for 10 minutes. Drain again.

Prepare a heavy syrup using 1 part sugar and 1 part water. Cover the rind with this syrup.

Add 1 thinly sliced lemon for every 3 quarts of rind. Optionally, add whole spices.
