  • 0.5 cup Sugar
  • 0.25 cup Cornstarch
  • 0.125 teaspoon Salt
  • 1.5 cup Orange Juice
  • 3.0 yolks Egg Yolks, beaten
  • 1.0 cup Yogurt, plain
  • 2.0 tablespoons Butter or Margarine
  • 2.0 teaspoons Orange Peel, finely shredded
  • 2.0 cups Fresh Orange Sections

Instructions

Step 1

In a saucepan, combine sugar, cornstarch, and salt. Stir in the orange juice until smooth.

Cook the mixture over medium heat, stirring constantly, until it becomes bubbly and thickens.

Gradually stir approximately 1 cup of the hot orange mixture into the beaten egg yolks to temper them.

Return the tempered egg yolk mixture to the saucepan with the remaining orange mixture. Cook and stir for 2 more minutes.

Remove the pan from heat. Stir in the plain yogurt, butter or margarine, and finely shredded orange peel.

Cover the pudding with plastic wrap, placing it directly on the surface to prevent a skin from forming, and chill thoroughly in the refrigerator until set.

Just before serving, gently stir in the fresh orange sections.
