Ingredients

  • 2 1/2 cups extra thick whole grain rolled oats
  • 1/2 cup buckwheat groats(optional)
  • 1/2 cup pumpkin seeds
  • 1/8 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup dried currants
  • 1/3 cup dried dates, roughly chopped
  • 1/4 cup dried cranberries
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons agave

Preheat the oven to 350 degrees F.

In a large mixing bowl add the oats, groats, pumpkin seeds, salt, cinnamon, currents, dates, cranberries, coconut oil, vanilla extract and agave. Using your hands, mix well to incorporate.

Place in the oven and lightly toast for 10-15 minutes until fragrant, stirring once halfway through.

Allow to cool slightly. Store in an airtight container. Will keep for two weeks.
