- 1/2 cup sugar
- 1/2 cup water
- 2 pounds ripe fresh mangoes
- 3 tablespoons freshly squeezed lime juice
- 2/3 cup coconut milk
- 2/3 cup cream(optional)
Instructions
Step 1
In a medium saucepan, combine the sugar and water. Bring to a boil while stirring and cook until the liquid is clear and the sugar is dissolved.
Step 2
Place the saucepan in an ice bath and stir constantly until it cools to room temperature.
Step 3
Peel, seed, and dice the mangoes. Puree them in a food processor with the lime juice and syrup. Transfer to a container and stir in the coconut milk. Cover and refrigerate until cold.
Step 4
Freeze the mixture in an ice cream maker according to the manufacturer's instructions. Transfer to a container and freeze until firm.
