  • 1 cup Cheddar cheese, shredded
  • 2 Eggs, well-beaten
  • 1 cup Cornmeal
  • 2 teaspoons Chili powder
  • 1 cup Milk
  • 1 1/2 teaspoons Salt
  • 1 can 16-oz. whole corn, drained
  • 1 can 16-oz. whole tomatoes
  • 1 pound Ground beef
  • 1/4 pound Pork sausage
  • 1/4 cup Chopped onion
  • 1 clove garlic, finely chopped
  • 20 Pitted ripe black olives (up to 24)

Cook ground beef, pork sausage, onion, and garlic in a skillet until the meat is nicely browned. Drain any excess fat if necessary. Stir in the tomatoes with their juice, drained corn, olives, chili powder, and salt. Heat the mixture to boiling. Pour the meat mixture into an ungreased 9x9x2 inch baking dish. In a separate bowl, mix cornmeal, milk, and eggs. Pour this cornmeal mixture evenly over the meat mixture in the baking dish. Sprinkle with shredded Cheddar cheese. Bake at 350 degrees Fahrenheit for 40-50 minutes or until golden brown.
