  • 2 cup Pink colored sugar
  • cup Strawberry Preserves
  • 3 Egg yolks at room temperature
  • cup Unsalted butter
  • 8 ounce Milk chocolate

Instructions

Step 1

Melt chocolate in a double boiler over hot water just until melted. Remove from heat.

Vigorously beat butter and egg yolks into the melted chocolate. Over hot water, slowly bring the mixture to 160°F and remove from heat immediately.

1-3 hours

Fold in strawberry preserves, mixing thoroughly. Chill until firm.

Scrape a spoon or melon-ball cutter across the surface of the mixture; quickly press with fingertips into 1-inch balls.

Freeze the truffle balls well wrapped in plastic.

Lightly dip truffles in pink colored sugar. Chill until firm.
