- 2 boneless skinless chicken breasts
- 1 large head broccoli, cut into florets
- 1 lemon, thinly sliced
- 2 tablespoons butter
- 1 teaspoon sugar
- all purpose flour
- 2 cloves garlic, minced
- 1 cup chicken stock
- 2 tablespoons dry white wine
- olive oil
- salt
- pepper
- 1 tablespoon chopped parsley
Instructions
Step 1
Preheat oven to 350 degrees.
Step 2
Place lemon slices on a baking sheet.
Step 3
Brush a little olive oil on each slice and sprinkle with salt and a little sugar.
Step 4
Add broccoli to the other side of the same baking dish.
Step 5
Toss broccoli with olive oil, garlic, salt and pepper.
Step 6
Roast for 20-25 minutes or until the broccoli and lemon slices begin to brown.
Step 7
Using a mallet or pot, pound the chicken breasts until thin.
Step 8
Salt and pepper each piece on both sides.
Step 9
Dredge each in flour, making sure to shake off any excess flour.

Place in a medium-high skillet with enough olive oil to coat the bottom.

Cook the chicken breasts until golden brown on each side.

Add wine and scrape the bottom of the pan for 1 minute.
Step 13
Add chicken stock and bring to a boil for 5 minutes.

Add the butter, lemon slices, most of the parsley and a touch more salt and pepper.

Cook for about 2 minutes and then serve chicken next to the broccoli.

Spoon sauce over chicken and broccoli.

Top the chicken with some lemon slices and sprinkle the remaining parsley.
