- 350 gram self-raising flour
- 0.25 teaspoon salt
- 1.5 teaspoon dried culinary lavender
- 1 teaspoon baking powder
- 85 gram butter
- 3 tablespoon caster sugar
- 175 milliliter milk
- 1 teaspoon vanilla extract
- lemon juice
- beaten egg
Instructions
Step 1
Tip flour into a bowl with salt and baking powder. Add butter and rub with your fingers until the mixture resembles breadcrumbs. Add lavender and sugar and mix well.
Step 2
Put the milk into a jug and heat for 30 seconds. Add the vanilla and lemon juice. Set aside. Place a baking sheet in the oven to preheat.
Step 3
Make a well in the dry flour mixture and add the liquid (milk, vanilla, lemon juice). Combine quickly with a knife.
Step 4
Scatter flour on a board and pat the dough into a round, about 4cm deep. Do not overwork the dough.
Step 5
Cut out rounds from the dough and place them on the preheated baking tray. Re-gather the dough and cut out more rounds until all dough is used.
Step 6
Brush the scones with beaten egg and bake for 10 minutes, or until risen and golden.
