  • 1 pound chicken breast fillets, trimmed and cut into 2 cm (1") cubes
  • 1 teaspoon chopped parsley
  • 1 teaspoon fresh rosemary leaves
  • 2 teaspoons fresh thyme leaves
  • 2 cloves garlic, crushed
  • 1 teaspoon black peppercorns, crushed
  • 1 lemon (grated rind and juice)
  • 2 teaspoons olive oil

Trim fat from chicken breast fillets and cut them into 1-inch (2 cm) cubes.

For the Moroccan lemon marinade, combine the chopped parsley, fresh rosemary leaves, fresh thyme leaves, crushed garlic, crushed black peppercorns, grated lemon rind (zest), lemon juice, and olive oil in a bowl.

Add the chicken cubes to the marinade, mix well to ensure all pieces are coated. Cover the bowl with plastic wrap and let it stand in the refrigerator for at least 30 minutes before use. Leaving it longer will enhance the flavor.

While the chicken marinates, place bamboo skewers or metal rods in a tray and cover them with water to prevent burning during cooking.

Thread approximately 4 pieces of the marinated chicken onto each skewer.

Cook the shish kebabs on a grill, in a skillet, or in the oven until they are cooked through and lightly charred.

Once the shish kebabs are cooked, serve them immediately. They can be served on a bed of rice, Mediterranean couscous, or simply with pita bread.
