My children's great-grandmother, Noni use to make Spinach & Potatoes often, of course she use all fresh ingredients which, you can too or you can use my quick and easy recipe.

  • 1 bag of fresh spinach
  • 1/4 cup water
  • 2 cans of whole potatoes
  • 3 tablespoons minced garlic
  • pinch red pepper
  • to taste salt and pepper
  • enough olive oil
  • as needed butter

Instructions

Step 1

In a large skillet, saute the whole potatoes with butter, salt, pepper, red pepper, and minced garlic. Meanwhile, in a medium bowl, toss the fresh spinach with water and olive oil.

Step 2

5 minutes or until spinach is soft

Once the potatoes begin to brown, add the tossed spinach to the skillet, cover, and lower the heat to simmer for approximately 5 minutes or until the spinach is soft.
