- Grated Romano cheese
- 1 pounds favorite noodles
- 29 ounces cannellini beans
- Salt(optional)
- Red pepper flakes(optional)
- Olive oil
- 1/2 cup chicken broth
- 1/4 cup wine
- 3 3/4 ounces sardines in oil
- 1 jalapeño with seeds
- 1 bunch Italian parsley
- 1 bunch scallions
- 4 cloves garlic
- 4 pieces sweet roasted red peppers
- 2 pints cherry tomatoes
Instructions
Step 1
In a food processor, combine the cherry tomatoes, roasted red peppers (including the pepper juice), garlic, parsley, scallions, jalapeño, and a drizzle of olive oil. Give a few good chops, leaving the mixture slightly coarse.
Step 2
Heat a large frying pan with a drizzle of olive oil and add the mixture from the food processor. Simmer gently on low.
Step 3
Add the sardines with their oil.
Step 4
Add the chicken broth and the wine, and continue to simmer gently on low.
Step 5
Add the salt, red pepper flakes, and the rinsed and drained beans.
Step 6
Prepare the noodles as directed.
Step 7
Drizzle a little olive oil on a platter. Plate the noodles, topping with the sauce and an additional drizzle of olive oil. Finish with grated Romano cheese.
