- 150 grams all purpose flour or maida
- 150 grams wheat flour
- 3 tablespoons melted ghee or butter
- 1/4 teaspoons salt
- 100 grams rava or semolina
- 100 grams grated dry coconut
- 100 grams sugar
- 50 grams raisins
- 50 grams cashew nuts
- 2 cardamom
- 1 tablespoon ghee or butter
- water(optional)
- oil for deep frying
Instructions
Step 1
In a mixing bowl, combine all purpose flour or maida, wheat flour, 3 tablespoons of melted ghee or butter, and salt. Mix thoroughly to form a soft dough. Set aside.
Step 2
Heat 1 tablespoon of ghee or butter in a pan. Fry the rava or semolina until it turns light brown. Remove from heat and let it cool completely. Once cool, add sugar, grated dry coconut, chopped raisins, chopped cashew nuts, and cardamom powder (from the 2 cardamoms) to the rava. Mix all ingredients well to combine.
Step 3
Take small portions of the dough and roll each portion into a thin, round disc. Place 1 to 2 teaspoons of the prepared filling in the center of each disc. Moisten the edges of the dough with a little water, then fold the disc over the filling and press the edges firmly to seal. Optionally, use a clove to press decorative patterns onto the sealed edges.
Step 4
After preparing all the puffs, heat oil in a wok or kadai. Deep fry the puffs a few at a time, turning them until both sides are light brown.
Step 5
Remove the fried puffs and place them on tissue paper or paper towels to absorb any excess oil. Once completely cool, store the Christmas Sweet Puffs in an airtight bin.
