  • 1/4 teaspoon Baking soda
  • 1/8 teaspoon Ground cloves
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Ground cinnamon
  • 2 teaspoons Baking powder
  • 3/4 cup Granulated sugar
  • 2 cups Unbleached all-purpose flour
  • 1 teaspoon Vanilla extract
  • 3/4 cup Grated carrots
  • 1 cup Mashed bananas
  • 2 Whipped egg whites
  • 4 tablespoons Applesauce, at room temperature

Step 1

Preheat oven to 350°F. Prepare pan(s) with cooking spray and flour. In a mixing bowl, combine applesauce, whipped egg whites, mashed bananas, grated carrots, and vanilla extract.

In another mixing bowl, combine unbleached all-purpose flour, granulated sugar, baking powder, ground cinnamon, salt, baking soda, and ground cloves. Mix the wet ingredients (from step 1) with the dry ingredients (from this step) just until moistened. Pour the batter into the prepared pan(s) and bake for 1 hour, depending on pan size.
