Zucchini Orange Cake
I love this cake, to use up all the frozen zucchini that is stashed in the big freezer. What better way, than to make this sweet cake? Substitute yellow squash if that is what you have on hand.

- 1 cups nuts(optional)
- 2 cups flour
- 2 teaspoons baking powder
- 1 teaspoons baking soda
- 2 teaspoons cinnamon
- 1 teaspoons nutmeg
- 1 1/2 cups sugar
- 1 cups oil
- 4 eggs
- 1 cups All Bran
- 1 teaspoons orange flavoring
- 1 teaspoons orange zest
- 2 cups shredded zucchini
Instructions
Step 1
In a large mixing bowl, combine the flour, baking powder, baking soda, cinnamon, and nutmeg.
Step 2
In a separate bowl, combine the sugar, oil, eggs, All Bran, orange flavoring, orange zest, and shredded zucchini. Mix well.
Step 3
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Step 4
If using, stir in the nuts.
Step 5
Pour the batter into a greased and floured 9x13 inch baking pan.
Step 6
Bake at 350°F for 35 minutes.
