- 3 Brinjal large size
- 3 tablespoons Lemon Juice
- 4 tablespoons Tahini
- 2 tablespoons Olive oil
- 3 cloves Garlic crushed
- 1/2 teaspoons Salt
- 1/2 teaspoons Black pepper
- Fresh Parsley/Coriander leaves chopped(optional)

20-30 minutes
Pierce the Brinjal with a fork, then grill over a flame until tender. Check tenderness by inserting a fork into the skin.

Cut the grilled Brinjal in half and scoop out the flesh/pulp.

Add Tahini, Lemon juice, Olive oil, Garlic, salt, and pepper to the scooped brinjal flesh and process in an electrical processor.

Baba Gonoush is ready. Garnish with olive oil and fresh parsley/coriander leaves and serve with pita bread/khubz.
