- 1 tablespoons whole wheat flour (as a substitute for 1 tablespoon white flour for thickening)
- 1 tablespoons rice flour (as a substitute for 1 tablespoon white flour for thickening)
- 1 tablespoons corn flour (as a substitute for 1 tablespoon white flour for thickening)
- 1/2 tablespoons corn starch (as a substitute for 1 tablespoon white flour for thickening)
- 1/2 tablespoons potato flour or starch (as a substitute for 1 tablespoon white flour for thickening)
- 1/2 tablespoons arrowroot (as a substitute for 1 tablespoon white flour for thickening)
- 1 cups molasses (as a substitute for 1 cup sugar)
- 1/4-1/2 teaspoons baking soda (add when substituting molasses for sugar, omit baking powder)
- 3/4 cups honey (as a substitute for 1 cup sugar)
- 3/4 cups maple syrup (as a substitute for 1 cup sugar)
Instructions
Step 1
FOR BAKING: To replace 1 cup of white flour, use one of the following: 3/4 cup whole wheat flour, 1 cup coarse corn meal, 7/8 cup rice flour, 1 1/2 cups rye flour, 5/8 cup potato flour, 1 1/2 cups ground rolled oats, or 1/2 cup barley flour. When baking with whole grains, be aware that adjustments may be needed in the amount of liquid (usually more will be needed) and shortening (usually less is needed).
Step 2
FOR THICKENING SAUCES AND OTHER DISHES: To replace 1 tablespoon of white flour, use one of the following: 1 tablespoon whole wheat flour, 1 tablespoon rice flour, 1 tablespoon corn flour, 1/2 tablespoon corn starch, 1/2 tablespoon potato flour or starch, or 1/2 tablespoon arrowroot.
Step 3
FOR SWEETENERS: To replace 1 cup of sugar, use one of the following: 1 cup molasses (when using molasses, add 1/4 to 1/2 teaspoon baking soda and omit baking powder), 3/4 cup honey (when using honey, reduce liquid by 1/4 cup), or 3/4 cup maple syrup (when using maple syrup, reduce liquid by 2 tablespoons).
