- 3 pounds boneless chicken breast
- 1 cup dry red wine
- 1/4 cup balsamic vinegar
- 1/2 cup olive oil
- 1/2 cup finely chopped kalamata olives
- 1/2 cup sundried tomatoes, reconstituted and finely chopped
- 1/2 cup minced sweet onion
- 4 cloves minced garlic
- 1 bunch basil
- as needed Salt and Pepper
Instructions
Step 1
Pound chicken breast to even thickness, then cut in half.
Step 2
Heat olive oil on medium heat in a heavy duty saucepan.
Step 3
Add onions and garlic to the saucepan and cook until clear.
Step 4
Add 1/4 of the olives to the saucepan.
Step 5
Add 1/4 cup of the sundried tomatoes to the saucepan.
Step 6
Add the chopped basil to the saucepan.
Step 7
Add the red wine and balsamic vinegar to the saucepan.
Step 8
Reduce the mixture over medium heat for 5-7 minutes.
Step 9
Set the marinade aside to cool.
Step 10
Season the chicken breast with salt and pepper.
Step 11
Pour 1/2 of the cooled marinade over the chicken breast and refrigerate for up to 4 hours.
Step 12
Grill chicken on medium heat until done. Reheat the remaining marinade and pour over the grilled chicken. Garnish with the remaining olives, sundried tomatoes, and basil, and serve with pasta.
