- 1 cup butter, at room temperature
- 1 cup light brown sugar
- 1/2 cup granulated sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 1 cup all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups old fashioned oats
- 1/2 cup chocolate covered raisins
- 1 cup semi-sweet chocolate chips
- 1 cup crumbled pretzels
- 1/2 cup shredded coconut
- 1/2 cup chopped pecans(optional)
Instructions
Step 1
Preheat oven to 350°F.
Step 2
In a large bowl, cream the butter and sugars.
Step 3
Add the eggs and vanilla extract, then mix until fully combined.
Step 4
Stir in the baking soda, salt, and flour. Mix until just combined, being careful not to overmix.
Step 5
Briefly mix in the old fashioned oats.
Step 6
Add the chocolate covered raisins, semi-sweet chocolate chips, crumbled pretzels, shredded coconut, and chopped pecans. Stir until just combined.
Step 7
Scoop 1 tablespoon portions of cookie dough onto un-greased cookie sheets, about 1/2 inch apart.
Step 8
Bake for 10-12 minutes, or until the cookies are golden brown along the edges.
