  • 1 pint Fresh raspberries
  • cup Vodka
  • 1 Vanilla bean
  • teaspoon Whole allspice
  • cup Sugar syrup

Select full colored and plump berries, avoiding stained baskets (a sign of overripe, softened, or decayed berries). Do not wash berries until ready to use, as water can cause mold to form. Rinse berries and place in a mixing bowl, lightly crushing them to release their flavor. Add vodka, vanilla bean, and allspice. Stir the mixture and store it in a bottle in a cool, dark place for 3 weeks. Strain the mixture through dampened cheesecloth, squeezing as much juice as possible. Pour the strained mixture back into the bottle, adding sugar syrup to desired sweetness.
