  • 3 cups cooked pinto beans
  • 6 oz firm tofu
  • 1 egg egg
  • 3 tablespoons bread crumbs
  • 5 tablespoons chopped cilantro
  • 1 onion finely chopped onion
  • 1 poblano pepper small chopped poblano pepper
  • 1 clove minced garlic
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • bunch small cilantro
  • 1 clove garlic
  • 2 green onions green onions
  • 3/4 cup mayo or vegenaise
  • 1 teaspoon lime juice

Step 1

Start with the sauce. Put all ingredients for the sauce into a food processor and process until smooth.

For the burgers, put beans, egg, and tofu into a food processor and process until smooth. If your processor is small, you might need to do this in portions.

Meanwhile, sauté the onion, poblano pepper, and garlic until soft. Season with salt.

In a bowl, combine the burger mix with cilantro, sautéed onions and peppers, salt, pepper, cumin, smoked paprika, and breadcrumbs. Mix well. Add more bread crumbs if necessary.

Form uniform patties and fry on a greased grilling pan on both sides. Be very gentle when turning them over as they might break easily.

Serve on a bun with some green mayo.
