Ingredients
- cup Jalapeno jelly
- teaspoon Dijon mustard
- cup Sour cream
- Salt and pepper(optional)
- Lemon juice
- 2 tablespoons Chopped fresh parsley
- 6 tablespoons Miracle Whip
- 4 tablespoons Finely chopped green onion
- 6 Hard cooked eggs
- 2-3 Ripe avocados, peeled and thinly sliced
Instructions
Step 1
Dip sliced avocado in lemon juice and arrange on the bottom of a quiche or pie plate. Mash the cooked eggs and combine with the green onion, Miracle Whip, mustard, parsley, and salt and pepper. Spoon an even layer of the egg mixture over the avocados. Spread the sour cream mixture evenly over the top. Spread Jalapeno jelly over the top, cover, and chill for several hours. Serve with crackers, allowing guests to spoon the dip on the crackers.
Step 2
Note: For added 'zip', jalapeno jelly is essential. If using regular pepper jelly, add a couple of dashes of hot sauce before spreading. Alternating green and red jalapeno jelly creates an attractive presentation for Christmas.
