Cupcakes with bacon, pineapple and chives

- 50 grams flour
- 40 grams wholemeal flour
- 50 milliliters milk
- 40 milliliters extra virgin oil Le Conserve della Nonna
- 70 grams diced bacon Beretta
- 2 slices pineapple
- 2 eggs eggs
- 0.5 packet yeast for pies
- chives chives
- 0.5 avocado avocado
- 1 lime lime
- to taste salt
- to taste pepper
Instructions
Step 1
Wash, dry, and chop the chives, then set aside.
Step 2
Cut the pineapple slices into cubes and set a portion aside.
Step 3
In a bowl, whisk the eggs with the milk and oil.
Step 4
Add the flour sifted with yeast for pies and stir until combined.
Step 5
Fold in the chives, 2/3 of the pineapple, and the bacon.
Step 6
Season with salt and pepper to taste.
Step 7
Line a muffin tin with baking cups and fill each cup about 2/3 full with the mixture.
Step 8
Bake in a preheated oven at 180°C for 20 minutes.
Step 9
Remove from oven and let cool completely on a wire rack.

To prepare the salty frosting: finely zest the lime, then blend the lime juice with the avocado pulp, adding a pinch of salt and pepper. Set aside.
Step 11
Transfer the frosting to a pastry bag and decorate the cupcakes with the remaining pineapple and lime zest.
Step 12
Refrigerate until serving.
