  • 1 small Pumpkin
  • 1 head Broccoli (medium sized)
  • 1 large Bell Pepper
  • 1 cup BPA free Organic Coconut Milk
  • Spring Onions (or 1 medium Onion)
  • 1 teaspoon Organic Coconut Oil
  • 1 clove crushed Garlic
  • 1 teaspoon Turmeric (preferably high curcumin)
  • splash Fermented Soy Sauce
  • Cracked Pepper
  • Pumpkin Seed Oil(optional)

Remove the pumpkin seeds and cut the pumpkin into roughly 2-inch wide strips. Steam with a lid on over medium heat for about 12 minutes, or until a fork easily pierces near the skin.

Pull off the broccoli florets and slice the center part into strips, ensuring none are too thick. Remove the stem and seeds from the bell pepper and wash it. Five minutes into the pumpkin steaming, add the broccoli florets and bell pepper to the steamer for the remaining steaming time.

Dice the spring onions (or onion) and lightly fry them in coconut oil over medium heat for about two minutes, stirring occasionally. Add the crushed garlic and turmeric, and stir briefly until mixed in and all orange. Add the coconut milk, soy sauce, and cracked pepper, then briefly simmer on low heat with a lid on.

Once the pumpkin, broccoli, and bell pepper are done, move the steamer to a chopping board. Transfer the broccoli and bell pepper into a blender. Add the sautéed spring onion and coconut milk mixture and give it a quick blend. For a smoother texture, pulse briefly before adding the pumpkin.

On a chopping board, carefully scoop out the pumpkin flesh from the strips, avoiding the hot skin. Focus on the brightest orange part of the pumpkin, usually in the center.

Add the scooped pumpkin flesh to the blender with the other ingredients and blend until smooth and creamy. Serve immediately.

If using Pumpkin Seed Oil, swirl or drizzle it over the soup in a zigzag pattern just before eating to add a nutty flavor and more nutrients.
