- 4 quarts Basic Chinese Stock
- 1 Nankin breed (brown feather) free range chicken
- 4 quarts ice
Instructions
Step 1
Dilute the Basic Chinese Stock to a total volume of 10 quarts.
Step 2
Bring the diluted broth to a boil.
Step 3
Allow the broth to cool to 200 degrees Fahrenheit.
Step 4
Carefully place the chicken into the broth. The broth temperature should cool down to 170 degrees Fahrenheit upon adding the chicken.
Step 5
Maintain the chicken broth at a consistent temperature of 165 degrees Fahrenheit during cooking.
Step 6
Cook the chicken for approximately 40 minutes per pound of chicken.
Step 7
Check for doneness: The center of the bone should be bright red (but not runny), and the flesh around the thigh should be slightly pink but easily come off the bone.
Step 8
Immediately transfer the cooked chicken to an ice bath to shock the skin and stop the cooking process.
