- 2 eggs
- slice avocado or tomato(optional)
- 2 piece cheese (like a not-too sharp white cheddar or Gruyere)
- greens (such as arugula)
- mustard
- vinegar
- extra virgin olive oil
- salt
- pepper

Toast the english muffins.

Spread the mustard on the other half.
