- 4 tablespoons butter
- 2/3 cups favorite jam
- zest of 1/2 lemon
- juice of 1/2 lemon
- 1 1/3 cups flour
- 1/4 teaspoons baking soda
- 1/4 teaspoons salt
- 2/3 cups oats
- 4 tablespoons brown sugar
- 3 ounces cream cheese
Instructions
Step 1
Preheat oven to 350 degrees Fahrenheit.
Step 2
Combine the flour, baking soda, brown sugar, and lemon zest in a medium-sized bowl. Set aside.
Step 3
In a stand mixer, combine the cream cheese and butter. Mix until smooth. Add the flour mixture and beat on low speed until the mixture is crumbly. Set aside one cup of this crumb mixture.
Step 4
Butter a 9x9 inch baking pan.
Step 5
Press the remaining crumb mixture onto the bottom of the prepared baking pan. Bake for 10-15 minutes.
Step 6
In a small bowl, combine the jam with the lemon juice. Carefully spread the jam over the hot crust. Sprinkle with the reserved cup of crumb mixture.
Step 7
Bake for 15-20 minutes, or until the top is slightly golden. Cool completely and then cut into bars.
