Can't Be Beat Buffalo Chicken Salad With Light Ranch Dressing

This recipe was entered in The Foodista Best of Food Blogs Cookbook contest, a compilation of the world’s best food blogs which was published in Fall 2010.

Ingredients

8 ounces chicken breast, cut into 1″ strips
1/4 cup hot sauce
1/2 small red onion, thinly sliced
1/2 medium bell pepper, thinly sliced
1 cup tomatoes, Baby Bell, halved
4 tablespoons light cheddar cheese, shredded
4 tablespoons light ranch dressing

Preparation

Toss sliced chicken in hot sauce and bake for 10 minutes until cooked through. Chicken should no longer be pink, but don’t over-cook or chicken will be dry and chewey.

Layer lettuce, onion, bell pepper and tomatoes on a large plate.

Top with chicken and cheese.

Serve dressing on the side.

If you’re looking for a healthy version of your favorite Buffalo Chicken, you’ve come to the right place. Typically Buffalo Chicken is deep fried, and made with the chicken’s wings, or drummettes. I can’t do that here, after all, this is a light cooking blog. So instead, I used lean chicken breast, and some really colorful salad ingredients to get the same big flavors. I love that hot sauce!
