- 300 gram 00 flour
- 15 gram baking powder
- 20 gram honey
- 200 gram granulated sugar
- 3 gram fine salt
- 250 gram whole eggs
- 220 gram butter
- 45 gram pistachio paste
- 70 gram cherries
- 25 gram whole pistachios
Instructions
Step 1
Place the butter in a saucepan and let it brown until it develops a 'noisette' (hazelnut) color and aroma.
Step 2
Weigh and combine the 00 flour and baking powder in a bowl.
Step 3
Mix the whole eggs with the granulated sugar and honey in a bowl set over a double boiler until the mixture reaches approximately 50°C.
Step 4
Carefully incorporate the warm egg mixture into the flour and baking powder mixture.
Step 5
Gradually add the browned butter (cooled to the same temperature as the dough mixture) in several additions, incorporating it fully into the dough after each addition.
Step 6
Weigh 315 grams of the prepared dough into a separate bowl and add the pistachio paste, cherries, and whole pistachios (filling ingredients).
Step 7
Mix the filled dough, pour it into a suitable paper or aluminum baking mold, and prepare softened butter (burro pomata) in a piping bag to pipe onto the surface for decoration.
Step 8
Bake in a preheated oven for 40 minutes at 145°C.
