  • 1 cup Tomatoes, peeled, seeded and chopped
  • 1 Lemon, cut into wedges
  • 1 teaspoon Hot red pepper sauce
  • 1/4 teaspoon Cayenne pepper
  • 1 teaspoon Basil (or 2 teaspoons fresh, chopped)
  • 1 tablespoon Parsley, chopped
  • 1 cup Dry white wine
  • 1 cup Vegetable stock(optional)
  • 4 6-ounce grouper fillets
  • 1 clove Garlic, minced
  • 1 cup Onions, chopped
  • 1 tablespoon Olive oil
  • Salt
  • Pepper

Step 1

Heat olive oil in a heavy nonstick skillet over medium heat.

3-4 minutes

Sauté chopped onions and minced garlic for 3-4 minutes or until the onions soften.

1 minute per side

Add grouper fillets to the skillet and sauté for about 1 minute per side.

Add the peeled, seeded and chopped tomatoes, hot red pepper sauce, cayenne pepper, basil (or fresh basil), chopped parsley, and dry white wine (or vegetable stock).

Season the mixture with salt and pepper to taste.

7-8 minutes

Cover the skillet and simmer for 7-8 minutes or until the fish flakes easily.

Serve the spiced grouper immediately with lemon wedges.
