Pumpkin Puree Soup With Bacon

This recipe was entered in The Foodista Best of Food Blogs Cookbook contest, a compilation of the world’s best food blogs which was published in Fall 2010.

Ingredients

1/2 onion
1 liter water
pepper and salt to taste
some parsely and cream (optional)

Preparation

Fry the onion and bacon in a large saucepan until the onion becomes soft, 3 to 4 mins

Add the cut-up pumpkin and fry all together for another 4 mins

Boil a liter of water and add it to the pumpkin in the saucepan Add the stock cube, some pepper and salt to taste (not too much as the bacon already contains plenty of salt) and let it simmer on medium heat for another 20 mins

Finally take the saucepan of the stove top an blend the soup until it becomes puree soup

Add the milk to soften the taste and serve immediately with a little bit of cream and parsley on top and some bread on the side. Enjoy!

The French Riviera is a place where salads are an important lunch or starter but as the weather has changed the other day, it's time for some more winter recipes. The cold wind makes me long for a nice hot soup. Tasty and simple with some vegetables and some meat to give the soup more flavour. And what better to use than bacon?! Pumpkin and bacon, an excellent combination. If you don't believe me, just give it a try ;-) .
