Mango Guacamole

Ingredients

Chop mango, onion, and garlic.

Seed and chop chiles.

Chop avocados, and put into a bowl.

Zest limes and reserve zest on the side.

Roll limes (to activate the juice).

Cut limes in half, and squeeze all of the juice into the bowl with the avocados.

Give the bowl a good stir.

Combine mango, onion, garlic and chiles into the avocado mixture.

Add the reserved lime zest, and stir everything together until the preferred consistency is reached.

The mango adds a sweetness which is refreshing with the garlic and the saltiness of the tortilla chips.

I made this but skipped the onion and garlic (nothing against those at all, I just usually don't use them in guacamole, even though many people do. My avocado wasn't as ripe as it should have been, but this was still great! Even my husband, who doesn't eat normal guacamole (the weirdo) or avocado in general, and is much less crazy about mango than I am, ate some.

I think from now on I'll only make mango guacamole instead of normal one.

Once I had all of the avocado chopped and in the bowl, I added the zest of both limes as well as the juice (so the avocados wouldn't oxidize). Then I added in the finely diced red onion and the garlic and gave it a stir. I saved the mango and the serranos for last. I gave everything a real good stir and that was it. I know some people like to blend or process their guac, but I really like the texture of a chopped one myself. The juice from the mango helped to soften the mixture too.

The final product was great. It tasted so fresh and had amazing flavor. It was perfect for our night in of playing games. It can definitely be doubled too in order to feed more people.
