Classic Tzatziki

Ingredients

1 clove garlic, mashed
1 tablespoon vinegar
Salt and pepper to taste
2 tablespoons olive oil

Preparation

Put yogurt in a cheesecloth-lined sieve in a bowl.

Drain overnight in the refrigerator.

When ready to prepare, peel and chop cucumbers very finely and drain well.

Add garlic, vinegar, oil, salt and pepper to the cucumber and mix well.

Add yogurt and blend.

Serve with Pita bread.

2.0 cups.
