  • 2.5 pounds Tuna
  • 3 tablespoons Walnut oil
  • 1 tablespoon diced fresh herbs (such as oregano and thyme)
  • 1 cup French organic lentils
  • 1 small red onion
  • 2 cloves garlic
  • 3 tablespoons Extra Virgin Olive Oil
  • 3 cups College Inn Chicken Broth
  • 1 cup White wine
  • Salt(optional)
  • Pepper(optional)

Instructions

Step 1

Sauté olive oil, garlic, and onion for about 5 minutes. Then add French lentils, white wine, and 2 cups of chicken broth.

Once the liquid is absorbed, add the remaining cup of chicken broth and continue cooking until absorbed.

1 hour or until soft

Cook the lentils on medium-high heat, stirring periodically, for about one hour or until the lentils are soft.

Meanwhile, marinate the tuna with herbs, walnut oil, salt, and pepper.

3-4 minutes per side

Grill the tuna on each side for 3-4 minutes.

Top the grilled tuna with beet greens.
