  • 2 packages 12.5 ounce silken tofu
  • 2 1/2 cups fresh raspberries
  • 3/4 cups agave nectar or maple syrup
  • 3 teaspoons vanilla extract
  • 1 1/3 cups raw cashews
  • 1/2 cups water
  • 3 tablespoons agave nectar
  • 1 teaspoon vanilla extract
  • fresh blueberries

Instructions

Step 1

In a food processor, whip tofu until smooth.

1-2 hours

Add berries, agave nectar, and vanilla and blend for another minute or so. Pour into a container with a lid, and chill for at least 1-2 hours before serving.

Using a blender, blend all Cashew Creme ingredients until smooth and fluffy.

Chill Cashew Creme before serving.

When ready to serve, assemble parfaits by layering raspberry mousse and cashew creme. Top with fresh blueberries.
