  • 1.75 cup Flour
  • 1.5 teaspoon Sugar
  • 0.25 teaspoon Baking powder
  • 1.0 teaspoon Baking soda
  • 3.0 Egg yolks, beaten
  • 3.0 Egg whites, beaten until stiff peaks form
  • 3.0 tablespoon Butter or margarine, melted
  • 2.25 cup Yogurt
  • 1.0 cup Blueberries

Step 1

Sift the dry ingredients (flour, sugar, baking powder, and baking soda) into a large mixing bowl. In a separate bowl, blend together the egg yolks and yogurt until well combined. Add the egg yolk mixture and melted butter or margarine to the dry ingredients and mix together until just combined. Gently stir in the blueberries.

3-4 minutes per side

Gently fold the beaten egg whites into the batter. Heat a griddle and cook the pancakes for 3-4 minutes per side until golden brown and cooked through.
