  • 2 tablespoons chopped fresh parsley
  • 1/2 cup crumbled feta cheese
  • 1/2 cup water
  • 1 sweet green peppers, chopped
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt and pepper
  • 2 teaspoons dried oregano
  • 3 pounds stewing beef
  • 1 1/2 pounds small onions
  • 3 cloves garlic, minced
  • 1 can tomatoes (28 oz)
  • 1/2 cup beef stock
  • 1 can tomato paste (5 1/2 oz/156ml)
  • 2 tablespoons red wine vinegar

Instructions

Step 1

Place all ingredients, except for the all-purpose flour, 1/2 cup water, sweet green peppers, crumbled feta cheese, and chopped fresh parsley, into an 18- to 24- cup slow cooker.

8 to 9 hours or 6 hours

Cook the ingredients on Low for 8 to 9 hours, or on High for 6 hours.

In a separate bowl, whisk together the 1/2 cup all-purpose flour and 1/2 cup water to form a slurry. Add this flour mixture and the chopped sweet green peppers to the slow cooker.

10 to 15 minutes

Continue to cook on High for 10 to 15 minutes or until thickened.

Serve the stew, sprinkled with the crumbled feta cheese and chopped fresh parsley.
