- 2 cups organic flour
- 1/3 cup organic brown sugar
- 1 teaspoons cinnamon
- 1 teaspoons ginger
- 1 teaspoons baking powder
- 1/2 teaspoons baking soda
- 1/2 teaspoons salt
- 1 stick cold unsalted organic butter, cut into small cubes (1/2 cup)
- 1/2 cup mini chocolate chips
- 1/3 cup buttermilk
- 1/2 cup organic pumpkin puree
- 1 teaspoons vanilla extract
Instructions
Step 1
Preheat the oven to 400°F (200°C). Line one cookie sheet with parchment paper or a silicone mat, then place it on top of another baking sheet.
Step 2
In a large bowl, whisk together the flour, brown sugar, cinnamon, ginger, baking powder, baking soda, and salt. Set aside.
Step 3
Add the cold butter cubes to the dry ingredients and knead them in until the mixture forms small crumbs. Stir in the mini chocolate chips and set aside.
Step 4
In a separate bowl, mix together the buttermilk, organic pumpkin puree, and vanilla extract. Add this wet mixture to the crumb mixture and mix until a cohesive dough forms.
Step 5
Turn the dough out onto a lightly floured surface and knead it briefly until it forms a ball.
Step 6
Pat the dough ball into a round shape, approximately 7 inches in diameter. Cut the round into 8 to 10 triangular pieces (dental floss can be used for clean cuts).
Step 7
Carefully move the scone pieces to the prepared baking sheet. Brush the tops of the scones with either an egg wash or heavy cream.
Step 8
Bake for 20 minutes, rotating the baking sheet 180 degrees after 10 minutes, or until the scones are golden brown.
Step 9
Enjoy the pumpkin scones immediately while warm.
