  • 1 head cauliflower
  • 2 cloves garlic
  • 2 shallots or red onions(optional)
  • 1 tablespoon olive oil
  • 1 cup chicken broth
  • 1 cup water
  • 1 teaspoon thyme
  • 1 bay leaf
  • 1 cup heavy cream
  • 1 teaspoon sea/kosher salt
  • 1 teaspoon ground black pepper

Preheat oven to 400 degrees.

Chop cauliflower into thick pieces.

Crush garlic.

Quarter shallots/red onions.

Chop thyme.

Combine cauliflower, garlic, onions, olive oil, and thyme into a pyrex (baking dish).

30 minutes

Bake for 30 minutes or until brown, tossing every 10 minutes.

15 minutes

Combine all ingredients EXCEPT heavy cream into a pot and cook on low for 15 minutes.

Remove bay leaf and using a hand blender or food processor, blend everything in the pot.

Slowly add the heavy cream and simmer for 5 minutes.
