- 1 unit boneless beef rib roast (4-5 lb.)
- 1 unit beaten egg
- 1 clove garlic, minced
- 1/4 cup chopped onion
- 2 tablespoons chopped pimiento green olives
- 3 slices bacon, snipped
- 4 ounces thinly sliced, fully cooked ham, chopped

In a bowl, combine chopped ham, snipped bacon, onion, olives, garlic, and beaten egg.

Unroll the roast and spread the ham mixture over the meat.

Re-roll the roast and tie securely.

Place the roast, fat side up, on a rack in a shallow roasting pan.

3-4 hours
Roast, uncovered, at 325 degrees for about 3 hours for rare, or 4 hours for medium.

15 minutes
Let the roast stand for about 15 minutes.

Remove strings and carve.
