Step 1
Thoroughly mix all seasonings together. There are two options for grinding the meat: either spread the mixed seasonings over the trimmings and grind the entire quantity through a fine plate, or alternatively, grind the unseasoned meat through 1/2-inch holes, then mix it with the seasonings, and finally grind the seasoned meat through 1/8-inch holes. If you are stuffing the meat into casings, do so immediately after grinding. The sausage should be soft enough to pack tightly into the casings without adding cold water.

To make bulk sausage that can be sliced, pack the ground sausage tightly into molds or pans and chill before slicing.
