  • Lettuce
  • Tomato wedges
  • Paprika
  • Lemon juice
  • Mayonnaise or salad cream
  • Chopped parsley
  • Chopped scallions
  • 2 Chopped tomatoes
  • 4 slices Chopped fried bacon
  • 4 Chopped hard boiled eggs
  • 10 ounce Cooked savoury rice
  • 2 pound Cooked, flaked smoked fish (cod, haddock or pollock)
  • Peanuts(optional)
  • Blanched red and green peppers(optional)
  • Cooked peas(optional)
  • Chopped pineapple(optional)

Instructions

Step 1

In a mixing bowl, combine the flaked fish, savoury rice, chopped hard boiled eggs, chopped bacon, chopped tomatoes, chopped scallions, and chopped parsley. Season the mixture well.

Step 2

Add enough mayonnaise or salad cream to the mixture to bind it together. Pack the combined mixture firmly into a mould and keep it in a cool place until ready to serve.

Step 3

When ready to serve, turn the moulded kedgeree onto a serving dish. Garnish with lettuce and tomato wedges, then sprinkle with paprika.

Step 4

Optionally, you may also add peanuts, blanched red and green peppers, cooked peas, or chopped pineapple to the Kedgeree mixture.
